In Italy, people have been preserving their food sott'olio or «under olive oil» for centuries — utilizing the oil's natural preservation properties to enjoy tomatoes, zucchini and eggplant year-round. In this class, our scuola chef Jeremy Williams and Growing Chefs founder and director Annie Novak will guide you through the process of rooftop gardening, as well as preserving your summer garden bounty through traditional Italian techniques.
