Pizzaiolo Lorin took inspiration from the season with his Verde e Bianco (sliced zucchini, goat cheese, housemade ricotta, Calabrian chili, red onion, Castelvetrano olives, and lemon slices topped with a mint sauce on Eataly's Classica pizza dough). To pair, Eataly and Rossopomodoro pizzaiolo Simone Iavarone created his Girasole, meaning «sunflower,» (cream, local corn, prosciutto cotto, and mozzarella di bufala on Eataly's Classica pizza dough). The best part? $10 from every pizza pairing sold on Tuesday, August 15, will go to the Chicago Children's Choir! Founded as a single choir in Hyde Park at the height of the Civil Rights Movement in 1956, today they serve 4,600 youth who represent all 57 Chicago zip codes. Since founding, they have established programs in 80 city schools, 10 neighborhoods, a choir for boys with changing voices and the world-renowned Voice of Chicago.
